Average size (d 43) of the fat globules in milk samples obtained before and after evaporation. The fat globule size was determined after dispersion in SDS and EDTA buffer () or in water () using Matersizer (Malvern Instruments Ltd, Worcestershire, UK). The samples were obtained from the Fonterra Co-operative Group. SDS and EDTA buffer dissociates the aggregated fat globules and protein particles in the samples; thus, the size of fat globules without aggregation was obtained using this determination. The difference between the size, determined in SDS and EDTA buffer and in water, indicates the extent of fat globule aggregation.
